This caramelized fennel goat cheese dip is, so far, my favorite recipe I’ve created for this blog. I got the idea of a fennel dip from Alison Wu , the queen of gorgeous party platters, layered smoothies, and being cute AF. She has a fennel dip that is basically nothing like this one except that there’s fennel in it. But I just couldn’t get the idea of caramelized fennel out of my head. It was as if it were asking to be created. And for good reason. The simplicity alongside the really gorgeous flavor of this dip is basically a dream come true.
How to Make Caramelized Fennel Goat Cheese Dip
Like I said. This caramelized fennel goat cheese dip is really simple to make. You simply slice up a couple bulbs of fennel, roast them in the oven, and purée it together with goat cheese, roasted garlic, and fresh dill. The end. Really what could be simpler. I have been spreading this stuff on toast, dipping it with chips, and straight up eating out of the tupperware container I stored it in. This dip will become a staple in my party planning recipes for years to come.
To cut a bulb of fennel, first cut off the fronds. You can use the fronds to cook with but I personally don’t like them. But I am sure there are some excellent pesto recipes out there. Next, cut the bulb in half lengthwise. You will notice there is a little core at the bottom. Cut the core out by cutting a V shape around the core, like in the photo below.
Once the core is removed you can easily slice and dice up your fennel, roast, and dip away!
Tip! It’s super scrumptious with a wee bit of smoked salmon.

Caramelized Fennel Goat Cheese Dip
Ingredients
- 2 bulbs fennel, fronds and core removed (see photo above)
- 1 Tbsp cooking oil like avocado oil, pure olive oil. or vegetable oil
- 3 cloves of garlic kept in their skins
- 4 oz goat cheese
- 2 Tbsp fresh dill
- Sea salt to taste
Instructions
- Heat your oven to 400 F/200 C/6 gas. Thinly slice the fennel bulbs into half moons, spread them over a lined baking sheet, and drizzle with oil and salt. Roast for 20 minutes.
- Add the garlic cloves still wrapped in their skins and toss them together with the fennel. Roast another 20-25 minutes more or until the fennel and garlic are tender and slightly golden.
- Add the caramelized fennel, goat cheese, roasted garlic, and dill to the food processor and process until you have a mildly chunky dip. Taste to see if it needs extra salt. Serve with a crudités platter, crackers, toast or whatever sounds wonderful. Garnish with fresh dill or fennel fronds.
