Football. Pizza. Beer.

It’s a predictable classic. Kind of like candy canes and Christmas. Hey, I’m all for classics. I just like to mix them up a little. This citrus craft beer cocktail gives a bright spin on the beer portion, while my easy kabocha goat cheese pizza takes pizza to another height.

If only I could put a spin on football.

These citrus craft beer cocktails are mixed with all the seasonal citrus (lime, lemon, and clementine), a dash of maple syrup, a shot of dark rum and topped off with a hop/malt balanced craft beer. It’s dark and stormy meets sweet and sour. I used this Conductor’s Craft Ale from Junction Craft Brewing, a local brewery here in Toronto. It’s hoppy and yet malty at the same time. It has the perfect brightness to pair with citrus as well as the mellow malt to go with dark rum and maple syrup. Juice a bunch of citrus, buy a bottle of rum and all the craft beer you already bought can be mixed up in a flash into something new. Have beer snob friends? Me too. Actually, I married one. My partner and I worked on the recipe for these citrus craft beer cocktails together. Beer snob approved!

Citrus Craft Beer Cocktails with Clementines and Maple

Ingredients

  • 2 oz clementine juice
  • 1 oz lemon juice
  • 1 oz lime juice
  • 1 oz maple syrup
  • 2 oz dark rum (not spiced)
  • 4 dahses of bitters
  • 1 pint hoppy and malty craft beer like an amber pale ale

Instructions

  1. Combine your citrus juices, maple syrup, rum, and bitters into a cocktail shaker or mason jar with 4 ice cubes. Shake until chilled.
  2. Divide the citrus rum mixture over two glasses with ice. I used low ball glasses but mine are pretty big. Top off each glass with 6-8 oz craft beer. Gently stir and sip!
