Ginger spiced cashew fruit dip or bust!
Guys! I just made the most epic holiday platter. It is completely covered with awesomely delicious things, like this ginger spiced cashew fruit dip. It pairs so perfectly with fresh persimmon or apple slices. I specifically designed this platter so that everyone at your party (no matter the diet restriction) will have something substantial, delectable, and nutrimental to eat. Cuz walking into a party and seeing the only thing you can eat is raw broccoli and celery is a real downer. And we all know that you like to throw a killer party.
Ginger spiced cashew fruit dip is three things: crazy addicting, easy to make, and full of holiday spirit. Ginger Spiced Cashew Fruit Dip {Raw, Vegan}
Ingredients
- 1 cup raw cashews, soaked in water for 24 hours
- 2 Tbsp fresh lemon juice
- 6 Tbsp mylk of choice (I used coconut) or water
- 1 Tbsp + 1 tsp maple syrup or honey
- 1 tsp ground ginger
- ¼ tsp cinnamon
- dash nutmeg
- ¼ tsp vanilla extract
- pinch of sea salt
Instructions
- Drain your soaked cashews and add them to a high powered blender or food processor. Add the mylk or water, maple, ginger, cinnamon, nutmeg, vanilla and salt. Purée on high, taking a break to scrape down the sides of the blender or food processor bowl, until you have a super smooth, creamy dip. It will take a good 5 minutes at least. Test to see if it’s ready by rubbing a drop of fruit dip between your fingers. If it’s smooth and lacks any chunks or graininess it’s done!
