The perfect sweet and tangy cocktail. This pineapple margarita recipe is easy, classic, and bursting with flavor.

Guys, I love myself a good margarita. Lots of fresh citrus, that perfect balance of quality tequila, barely any Cointreau, shaken with ice, and all the salt. There is almost no occasion inappropriate for a margarita. So I thought it would be the perfect recipe for my big announcement.

I am pregnant!!! Boy does it feel good to get that off my chest. And while no, I cannot drink one of these beautiful pineapple margaritas to celebrate the occasion I am going to ask that you have one (or two) for me. Hooray!

Tardy National Margarita Day

I was recently asked to come up with a margarita recipe for national margarita day. And I came up with this easy pineapple margarita and then totally missed national margarita day over here at POP KITCHEN. I know, how rude! And the reason I missed it is because I have been so sick.

It’s the same reason you haven’t seem me around here at all lately. The nausea during my first trimester was so much more intense than with my first child. I couldn’t cook food, look at food or even think about food. It felt like having the stomach flu and being on the verge of losing it FOR 6 WEEKS SOLID! I have officially hit the 14 week mark and am now in my second trimester. I finally feel good again. So here I am, offering this pineapple margarita recipe hoping it can help you drink away all the POP KITCHEN you missed while I was gone.

Pineapple Margarita Recipe for Baby

While I haven’t been drinking margaritas, I have been really craving my own cocktail of club soda with a splash of pineapple juice (with lots of ice!). I just know that the inspiration for the “pineapple” in this pineapple margarita recipe was spurred on by little baby nugget. But the truth is pineapple and tequila make an excellent pair. The internet is littered with cocktail recipes mixed with pineapple and tequila. I think it’s because the fruit is both very sweet while also being tangy from it’s high acid content. We already know tequila is the perfect thing to go with sweet and tangy (as proof of the perfection of the margarita).

A Little Update on Me

I’ve been so sick. Did I mention that? Being a food person who thinks about food and works with food every day, I was in sheer hell. I may have said on several occasions, “I never want to eat again!” The smell of toast made me throw up. I threw up while cooking chili for a client. Like I said, I was sick. I digress.

I just recently saw my midwife and everything seems to be going A OK. I’m already feeling this little bundle moving around! We spilled the beans to Willow, the big sister, and she was through the moon. She is still on cloud 9. Having your second is very different. In many ways it has been worse with the nausea but it has also been better. Knowing more what to expect, not having so much fear, and watching my 5-year-old get ready for a new baby has made this pregnancy so much more fulfilling.

Drink One For Me

I so badly want to whip up this pineapple margarita recipe because it sounds just about perfect right now. So please, get some citrus, pineapple, and tequila and do me the favor and sip away of this easy, fresh cocktail on Friday night.

Pineapple Margarita Recipe + A BIG ANNOUNCEMENT

Ingredients

  • 4 oz 100% agave blanco tequila
  • 1 oz triple sec or cointreu
  • 2 oz fresh squeezed lime juice
  • 1 oz fresh squeezed lemon juice
  • 8 oz pineapple juice (not from concentrate is best)
  • 1 tablespoon course salt, such as kosher salt, sprinkled on a plate

Instructions

  1. Rub the rim of two glasses with a lime and dip the glasses into the salt
  2. In a cocktail shaker, combine the tequila, triple sec, lime juice, lemon juice, and pineapple juice with 4-5 large ice cubes. Shake until the shaker is cold and frosty.
  3. Place 3 large cubes of ice in your cocktail glasses and evenly pour the margarita between the two glasses. Garnish with a lime wedge and a slice of pineapple.
